I saw a recipe for a
Veggie Pie on the Dr. Oz show and decided to give it a go! 360 calories, 20g protein and 5g fiber in one serving! I think I have way more noodles and cheese, but everything else is right. I didn't realize it only called for 3 oz of noodles, so my pie sheets came out kind of messed up. If anyone follows their recipe, make sure to use minimum noodles otherwise the egg/noodle pie sheets don't stay together. Aside from that, I added some hot sauce to the tomatoes and it tastes really good! I would definitely make this again or make other versions of it. Maybe one with quinoa, chickpeas, black beans, or legumes. YUM!
